Cinnamon Roll Breakfast Cake Recipe
For the topping, I saw a recipe somewhere for coffee cake, but the topping was made with melted butter, which sounded a bit strange, but I decided to give it a try.
For the recipe, I used a recipe I have for the batter and changed up the melted butter idea for the center and topping of the breakfast cake. I did end up adding oats to mine to thicken it up a bit, but the results were good, in my opinion.
It definitely turned out to be more of a breakfast cake than a coffee cake with the traditional crumble type topping. But overall, I was happy with the results.
To make this cinnamon roll breakfast cake, you really don’t need a whole lot of ingredients, just the following:
- Flour
- Sugar
- Brown Sugar
- Butter
- Baking Soda
- Baking Powder
- Salt
- Egg
- Sour Cream
- Vanilla
- Oats
- Cinnamon

First, you’ll preheat your oven to 350 degrees and prepare a 9×9 baking pan with nonstick spray.
Combine all the dry ingredients in a large mixing bowl and mix. Next, you’ll cut in the butter and then mix using the mixer to combine completely.
Add the egg, sour cream, vanilla, and 1/4 cup of milk. Using a mixer, combine completely. If needed, add the remaining milk until you get a cake batter consistency.
Next, we are going to prepare the center and topping by melting butter. Once the butter is melted, mix in brown sugar, cinnamon, and oats.
Next, pour 1/2 to 3/4 of the batter into your prepared baking dish.
Add about 1/4 of the brown sugar on top of the batter you just placed in the pan and swirl it into the batter using a spoon.
Pour the reaminaing batter on top of the brown sugar mixture evenly, and top off with the remaining brown sugar mixture, swirling it into the batter a little bit.
Bake for 30 to 35 minutes or until toothpick done in the center. Remove the cinnamon roll breakfast cake from the oven and allow it to cool completely; the top will harden up a bit.

Ingredients
Cake
- 2 1/4 cups flour
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup butter
- 3/4 cup sour cream
- 1 larege egg
- 1/2 teaspoon vanilla
- 1/2 cup milk
Topping
- 1 cup melted butter
- 1 1/2 cups brown sugar
- 1 cup oats
- 2 teaspoons cinnamon (More or less to your taste buds)
Instructions
Cake
- Preheat the oven to 350 degrees and prepare 9×9 baking pan with nonstick spray and set aside.
- In a large mixing bowl, combine flour, sugar, baking soda, baking powder, and salt.
- Cut the butter into flour mixture then mix using mixer to combine.
- Add egg, sour cream, vanilla, and 1/4 cup milk and mix completely. If needed, add the remaining milk until you get a cake batter type consistency.
Center/Topping
- Melt butter, add brown sugar, cinnamon, and oats and mix completely.
- Pour 1/2 to 3/4 of the batter into your prepared baking pan.
- Next add about 1/4 of the brown sugar mixture and using a spoon, swirl the brown sugar into the cake some, it doesn't have to be a lot.;
- Pour the remaining batter on top and spread it as evenly as possible.
- Pour the remaining brown sugar mixture on top and swirl it into the batter a little bit.
- Bake for 30-35 minutes or until toothpicks done in the center.
- Remove from the oven and allow to cool completely, and the top will harden up a bit.
