How do Grinch Sugar Cookie Bars sound for the holiday season? I have to admit, one of my favorite Christmas characters is the Grinch, so if I ever get the chance to think of something I can make that’s inspired by the famous Dr. Seuss character, chances are I am going to do it.
Grinch Sugar Cookie Bars
So far, I’ve made Grinch-inspired Rice Krispy Treats, Grinch Christmas Punch, Grinch Candy Popcorn and now these Grinch Sugar Cookie Bars. Oh, and I’ve also made some Grinch Oreos, which turned out pretty neat. I don’t think I shared those on my blog, just on my Instagram. I’ll probably share the Grinch Oreos on the blog next. They really turned out neat. I’ll share the links to all these recipes after the recipe at the end of the blog post.

Grinch Sugar Cookie Bars
Ingredients
Cookies
- 1 cup butter softened
- 2 1/2 cups sugar
- 4 large eggs
- 5 cups flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
Frosting
- 1/2 cup butter softened
- 4 ounces cream cheese
- 1/2 teaspoon vanilla
- 1/4 teaspoon almond extract
- 4 cups powdered sugar
- 1 1/2 tablespoons heavy whipping cream
- Neon green food coloring
- Large heart sprinkles
Instructions
Cookies
- Preheat oven to 350 degrees
- Prepare a large sheet sheet with non-stick spray. (13×18 cookie sheet)
- In a large mixing bowl combine flour, salt and baking soda and whisk together until all lumps and stuff are gone. Set aside.
- Using a mixer cream the butter and the sugar. Takes about 2 minutes.
- Add eggs to the sugar and butter mixture 2 at at time and mix and vanilla and mix completely.
- Add the dry mixture to the wet mixture and mix until combined.
- Spread it out evenly on your cookie sheet.
- Bake for 13 to 15 minutes. If you notice the edge is starting to lightly brown, take them out. You want the center to still be white, not wet but light. I baked these a tad too long and I only did 15 minutes, I should have taken them out a little sooner.
- Remove from oven and allow to cool.
Frosting
- Using a mixer combine the cream cheese and butter, add vanilla and almond extract and mix.
- Add powdered sugar slowly and mix.
- Add food coloring and heavy whipping cream slowly. I would add 1 tablespoon of heavy whipping cream and mix to see if you need to add more. Add it slowly, a little goes a long way.
- Frost the cookies, cut into bars and add your heart sprinkle.
