This keto sausage & veggie breakfast casserole is super yummy and loaded with flavor. Even if you are not searching for a keto breakfast casserole, this is delicious.
I have to admit, I was surprised with how great it turned out. Even my daughter came home from school and polished it off, and believe it or not that does say something, lol. If it’s Madisyn approved, it’s good.
Keto Egg Sausage Veggie Breakfast Casserole
This Keto Egg, Sausage, Veggie Breakfast Casserole is loaded with eggs, sausage, and some of your favorite veggies such as green onions, red and green bell peppers, mushrooms, onions and even some spinach!
Keto Egg Sausage Veggie Breakfast Casserole
Ingredients
- 6-7 large eggs
- 1/2 cup milk
- 8 ounces sausage
- 2 cups pepper & onion blend (you can also use fresh bell peppers and onions)
- 1 jalapeno chopped
- 7-8 fresh mushrooms sliced 1
- 1 cup fresh spinach chopped (or to your liking)
- 1 tablespoon butter
- 2 cups cheese
- Seasonings to your liking (I used garlic salt, salt and pepper)
- 2 Green onions (chopped)
Instructions
- Preheat oven to 350 degrees.
- In a large bowl add eggs, milk, salt and pepper and whisk together completely.Ā Set aside.
- Cook the sausage.Ā Once the sausage is cooked (do not drain grease), add sausage, pepper & onion blend, finely chopped jalapeno, chopped mushrooms, spinach, and butter and cook together on low for about 5 minutes.Ā Season to your liking.
- Combine, eggs, sausage mixture, 1 cup cheese and mix.
- Pour mixture into greased baking pan and bake for about 20 minutes or until done.
- Add an additional 1 cup of cheese (or more if you like) to the top of the breakfast bake and cook for another 3-5 minutes or until the cheese is melted.
- Garnish with green onion and enjoy.
