Chewy Peanut Butter Rolo Stuffed Cookie Cups

Ingredients
  

  • 2 packages of Rolo candies
  • ½ cup butter at softened room temp
  • ½ granulated sugar
  • ½ cup packed brown sugar
  • 1 egg
  • 1/2 cup peanut butter
  • 1 ¼ flour
  • ¼ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt

Instructions
 

  • Prepare a mini muffin pan with cooking spray and preheat the oven to 350 degrees.
  • Beat butter with a mixer until creamy; add sugars and beat for about 1 to 2 minutes.
  • Mix in the peanut butter and egg until combined.
  • In a small mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Stir the dry ingredients into the peanut butter mixture.
  • Place in the fridge for 1-2 hours and allow to chill. Preheat the oven to 375 degrees.
  • Make the dough into about 1-inch balls and place them in the mini muffin pan. Lightly smash them down to fit into the muffin pan.
  • Place in the oven and allow to bake for about 7 minutes.
  • Remove from the oven, and while the cookies are still not pushed, push a Rolo candy into each of the cookies and allow them to cool in the pan.
