- 16 ounce Penne pasta
- 4 chicken breasts
- 1 can Hunt’s Diced Tomatoes (14.5 oz)
- 1 can Hunt’s Tomato Paste (6 oz)
- 2 cloves garlic
- 1 small white onion
- 1 tablespoon olive oil
- 1/4 cup water
- 1 cup heavy whipping cream
- 4 ounces cream cheese
- 1/2 cup mushrooms
- 1 1/2 cup parmesan cheese (grated)
- 4-5 cups fresh spinach
- salt and pepper to taste
- Black olives (garnish)
- Cherry tomatoes (garnish)

Boil water and cook penne pasta as directed on packaging. When pasta is cooked, drain and set aside.
While the noodles are cooking, add your chicken breasts and 1/2 tablespoon of olive oil to the pan and cook them.
Dice the onion, mince the garlic, and place them in a large skillet with ½ teaspoon olive oil. Tomato paste, diced tomatoes, cooked chicken, and about 1/4 cup of water and mix thoroughly. Allow to cook on medium heat for about 5 minutes, then reduce heat to low.
