Grilled Hawaiian Chicken Kabobs

Ingredients
  

  • 6 boneless skinless chicken breast
  • 1/4 cup vegetable oil
  • 1/3 cup honey
  • 1/3 cup soy sauce
  • 1 clove garlic (minced)
  • 1 small white onion
  • 1 red pepper
  • 1 green pepper
  • 1-2 cups pineapple (fresh or canned, I used fresh)
  • salt and pepper to taste

Instructions
 

  • Combine oil, honey, soy sauce, and pepper to taste in a medium bowl and whisk together. If you would like to add some pineapple juice, now is the time to do it.
  • Separate 1/4 cup of the honey mixture and set aside for brushing the kabobs later.
  • Cut the chicken into decent-sized cubes that will fit nicely on the skewers, then add the chicken to the honey mixture in a plastic bag and allow to marinate for at least one hour.
  • Cut the peppers and onions into skewer-sized pieces, place them in the baggie with the chicken, and allow them to marinate for another hour.
  • Drain the marinade sauce from the chicken and veggies, and thread the chicken, peppers, and onions on the skewers, alternating between the chicken, green peppers, red peppers, and onions.
  • VERY lightly oil your grill grate and place skewers on the grill. Allow to cook for about 13 to 15 minutes, or until the chicken is done. Lightly brush kabobs with marinade frequently.
  • Remove from grill and enjoy
