Berry Avocado Spinach Salad with Balsamic Vinaigrette Dressing

This Berry Avocado Salad with Balsamic Vinaigrette Dressing is a great way to step up your salad game.

Ingredients
  

Balsamic Vinaigrette Dressing

  • 1/2 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons sugar
  • Salt and pepper to taste

Salad

  • 8 cups raw spinach (loosely packed)
  • 1 cup romaine lettuce (chopped)
  • 1-2 avocados (seeded, peeled and sliced)
  • 1 cucumber (diced)
  • 10 fresh strawberries (sliced in half)
  • ¼ - ½ cups raspberries
  • ¼ to ½ cup blackberries
  • ¼ to ½ cup feta cheese

Instructions
 

Balsamic Vinaigrette Dressing

  • First, combine the oil, vinegar, and sugar and mix them together.
  • Salt and pepper to taste, and set aside for later.

Berry Salad

  • Cut fruits and veggies.
  • Arrange fruits and veggies in a large bowl.
  • Lightly toss, add ½ of the salad dressing, and toss again.
  • Add the rest of the salad dressing, toss again, and serve. Enjoy!
