Cherry Cheesecake with Oreo Crust

Ingredients
  

  • 8 oz cream cheese
  • 8 oz ricotta cheese
  • 4 oz sour cream
  • 2 large eggs
  • 1 tbs vanilla extract
  • 1 tbs corn starch
  • 2 tbs four
  • 1 can cherry pie filling
  • 12 oreo cookies
  • 2 tbs melted butter
  • 6 " round spring form pan

Instructions
 

  • Place cookies in a food processor on pulse about 45 seconds
  • Add in melted butter.
  • Press into the bottom of springform pan.
  • Mix together cheeses and eggs.
  • Mix in sour cream.
  • Add in corn starch and flour.
  • Stir vanilla in.
  • Mix well until all combined.
  • Pour into spring form pan.
  • Place 1 cup of water in the bottom of pressure cooker.
  • Place spring form pan on trivet in the pressure cooker.
  • Cook on high pressure for 40 minutes.
  • Do a quick release.
  • Remove and completely cool about 1-2 hours.
  • Top with cherry pie filling and enjoy.
