Grinch Sugar Cookie Bars

These Grinch Sugar Cookie Bars are fun, festive and super delish!

Cookies
- 1 cup butter softened
- 2 1/2 cups sugar
- 4 large eggs
- 5 cups flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
Frosting
- 1/2 cup butter softened
- 4 ounces cream cheese
- 1/2 teaspoon vanilla
- 1/4 teaspoon almond extract
- 4 cups powdered sugar
- 1 1/2 tablespoons heavy whipping cream
- Neon green food coloring
- Large heart sprinkles

Preheat oven to 350 degrees
Prepare a large sheet sheet with non-stick spray. (13x18 cookie sheet)
In a large mixing bowl combine flour, salt and baking soda and whisk together until all lumps and stuff are gone. Set aside.
Using a mixer cream the butter and the sugar. Takes about 2 minutes.
Add eggs to the sugar and butter mixture 2 at at time and mix and vanilla and mix completely.
Add the dry mixture to the wet mixture and mix until combined.
Spread it out evenly on your cookie sheet.
Bake for 13 to 15 minutes. If you notice the edge is starting to lightly brown, take them out. You want the center to still be white, not wet but light. I baked these a tad too long and I only did 15 minutes, I should have taken them out a little sooner.
Remove from oven and allow to cool.
Frosting
Using a mixer combine the cream cheese and butter, add vanilla and almond extract and mix.
Add powdered sugar slowly and mix.
Add food coloring and heavy whipping cream slowly. I would add 1 tablespoon of heavy whipping cream and mix to see if you need to add more. Add it slowly, a little goes a long way.
Frost the cookies, cut into bars and add your heart sprinkle.
