Ingredients
  

  • 4 to 6 Chicken breasts
  • Olive Oil
  • 1 package Fajita Seasoning
  • 1 Red Bell Pepper
  • 1 Green Bell Pepper
  • 1 Yellow Bell Pepper
  • 1 White Onion
  • 1 can Old El Paso Refried Beans
  • 1 package Old El Paso Boats
  • Cheese

Toppings

  • Avocado
  • Tomatoes
  • Lime
  • Salsa
  • Sour Cream

Instructions
 

  • Cook chicken. I cooked mine in the crockpot.
  • Shred cooked chicken using two forks.
  • Preheat oven to 350 degrees.
  • Place chicken in a pan with olive oil and seasoning and cook on low for about 5 minutes just to incorporate all the seasonings.
  • Add sliced peppers, onions, and 1 cup of water (you could also use chicken broth). Turn heat up to medium and allow to boil.
  • Once water starts boiling, turn it down and allow it to simmer until all the water is cooked out.
  • Line a baking pan with Old El Paso Taco Boats; add about two spoonfuls of beans into each taco boat.
  • Repeat until all taco boats have a layer of refried beans.
  • Fill each taco boat with chicken, top with cheese and bake until cheese is melted, This should take about five to ten minutes.
  • Remove from oven, add toppings, and enjoy.

Notes

Cooking time really is going to depend on how you go about cooking your chicken.  I did not include chicken in total cooking time.
