How To Make Delicious Chicken Fajita Taco Boats

Ingredients:

  • Chicken breasts
  • Olive Oil
  • Fajita Seasoning
  • Red Bell Pepper
  • Green Bell Pepper
  • Yellow Bell Pepper
  • White Onion
  • Old El Paso Refried Beans
  • Old El Paso Boats
  • Cheese
  • Avocado
  • Tomatoes
  • Lime
  • Salsa
  • Sour Cream

Directions:

Cook chicken. I cooked mine in the crockpot. 

Shred cooked chicken using two forks.

Preheat the oven to 350 degrees.

Place chicken in a pan with olive oil and seasoning and cook on low for about 5 minutes just to incorportate all the seasonings.

Add sliced peppers, onions, and 1 cup of water (you could also use chicken broth). Turn heat up to medium and allow to boil.

Once water starts boiling, turn it down and allow it to simmer until all the water is cooked out.

Line a baking pan with Old El Paso Taco Boats; add about two spoonfuls of beans into each taco boat.

Repeat until all taco boats have a layer of refried beans.

Fill each taco boat with chicken, top with cheese, and bake until cheese is melted. This should take about five to ten minutes.

Notes

Cooking time really is going to depend on how you go about cooking your chicken.  I did not include chicken in total cooking time.
