This Keto Egg Sausage Veggie Breakfast Casserole is loaded with protein, veggies and not lacking flavor.

- 6-7 large eggs
- 1/2 cup milk
- 8 ounces sausage
- 2 cups pepper & onion blend (you can also use fresh bell peppers and onions)
- 1 jalapeno chopped
- 7-8 fresh mushrooms sliced 1
- 1 cup fresh spinach chopped (or to your liking)
- 1 tablespoon butter
- 2 cups cheese
- Seasonings to your liking (I used garlic salt, salt and pepper)
- 2 Green onions (chopped)
Get Recipe Ingredients
Preheat oven to 350 degrees.
In a large bowl add eggs, milk, salt and pepper and whisk together completely. Set aside.
Cook the sausage. Once the sausage is cooked (do not drain grease), add sausage, pepper & onion blend, finely chopped jalapeno, chopped mushrooms, spinach, and butter and cook together on low for about 5 minutes. Season to your liking.
Combine, eggs, sausage mixture, 1 cup cheese and mix.
Pour mixture into greased baking pan and bake for about 20 minutes or until done.
Add an additional 1 cup of cheese (or more if you like) to the top of the breakfast bake and cook for another 3-5 minutes or until the cheese is melted.
Garnish with green onion and enjoy.
