Lunch Lady Brownies

Take it back old school with the fudgy lunch lady brownies so many of us remember and love. I still don't think I've found a recipe that can compete with the old school lunch lady brownies but these are close.

Ingredients
  

Brownies

  • 2 cups cups brown sugar
  • 2 cups flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 cup butter (melted)
  • 2 teaspoons vanilla

Frosting

  • 3 cups powdered sugar
  • 1/4 cup cocoa powder
  • 1/4 cup butter (softened)
  • 1 teaspoon vanilla
  • 1/4 cup milk

Instructions
 

Brownies

  • Preheat oven to 350 degrees.
  • Prepare brownie pan with non-stick spray.
  • In a large mixing bowl combine flour, brown sugar, cocoa powder, salt and whisk together until all lumps are gone.
  • Add eggs, butter, and vanilla and mix completely.
  • Pour evenly into brownie pan and bake at 350 degrees for 20 minutes or until toothpick done in the center.
  • Remove from oven and allow to cool before frosting.

Frosting

  • In a medium-sized mixing bowl combine powdered sugar, cocoa powder, vanilla, butter and mix the best you can.
  • Add the milk a little at a time, mixing between until you reach the desired consistency.
  • You might not use all of the milk so be sure to add it little by little.
  • Frost brownies, cut and enjoy.

Notes

These lunch lady brownies were a bit thick, I personally didn't mind but if you are not into thick brownies you might consider decreasing the recipe a bit or placing them into a larger pan.
