Pistachio Muffins Recipe

These pistachio muffins are delicious and fairly easy to make. I used pistachio-flavored pudding and topped them with a little sugar and crushed up pistachios

Ingredients
  

  • 1 1/2 cups flour
  • 1 package pistachio-flavored instant pudding 3.4 ounce package
  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 cup vegetable oil
  • 1 cup milk
  • 2 large eggs

Topping (optional)

  • Crushed pistachios
  • sugar

Instructions
 

  • Preheat oven to 425 degrees and prepare muffin pan with liners. Set aside for later.
  • In a large mixing bowl, combine the pudding, sugar, brown sugar, salt, baking soda, and baking powder and whisk together. Set aside.
  • In a medium-sized mixing bowl, combine milk, eggs, vegetable oil, almond extract, and vanilla extract and mix completely.
  • Pour the wet ingredients into the large mixing bowl with the dry ingredients and mix completely.
  • Fill muffin liners about 3/4 of the way full.
  • Optional: Combine crushed pistachio pieces with a few tablespoons of sugar and sprinkle over the top.
  • Place in the oven and turn the temperature down to 350 degrees.
  • Allow to bake for 18 minutes or until cooked completely.
  • Remove from oven, allow to cool, and enjoy.
