These pistachio muffins are delicious and fairly easy to make. I used pistachio-flavored pudding and topped them with a little sugar and crushed up pistachios, and they turned out great. If you wanted, you could definitely toss some pistachio pieces in the batter as well.
While the granulated sugar turned out great. I personally prefer using a more coarse sugar. It makes the tops of the pistachio muffins a bit crunhier with a sweeter flavor🤩.
Pistachio Muffins Recipe

Ingredients:
- Flour
- Pistachio instant pudding
- Sugar
- Brown sugar
- Salt
- Baking soda
- Baking powder
- Vanilla extract
- Almond extract
- Vegetable oil
- Milk
- Eggs
- Pistachios (optional, but delicious)
Directions:
Preheat oven to 425 degrees and prepare muffin pan with liners. Set aside for later.
In a large mixing bowl, combine the pudding, sugar, brown sugar, salt, baking soda, and baking powder and whisk together. Set aside.
In a medium-sized mixing bowl, combine milk, eggs, vegetable oil, almond extract, and vanilla extract and mix completely.
Pour the wet ingredients into the large mixing bowl with the dry ingredients and mix completely.
Fill muffin liners about 3/4 of the way full.
Optional: Combine crushed pistachio pieces with a few tablespoons of sugar and sprinkle over the top.
Place in the oven and turn the temperature down to 350 degrees.
Allow to bake for 18 minutes or until cooked completely.
Remove from oven, allow to cool, and enjoy.

You could definitely have fun with this recipe and add a little extra food coloring to give them that extra green pop, add mix-ins, and get creative with the topping.
