How do baked chocolate chip cake donuts with peanut butter glaze sound?  It sounds excellent in my opinion, lol.  Then again, it could be because I made the donut recipe for my family the other morning.  It is GOOD; so far the best baked donuts I have done.  I seriously think the trick was adding chocolate milk rather than water and regular milk.  Here is the recipe I hope you enjoy it.

Baked Chocolate Chip Cake Donuts with Peanut Butter Glaze

Here is everything youā€™ll need to make these super yummy cake donuts with a delicious peanut butter glaze:

Donuts

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 4 tablespoons unsweetened cocoa powder
  • 2 teaspoons baking powder
  • Ā½ teaspoons salt
  • 1large egg
  • 1 Ā½ TruMoo Chocolate Milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter (melted)
  • 1 Ā½ to 2 cups dark chocolate chips (depending upon how much you like chocolate)

Peanut Butter Glaze:

  • 1 Ā½ ā€“ 2 cups powder sugar
  • Ā¼ cup milk (you can also use TruMoo Chocolate Milk to give it a chocolatey flavor)
  • 1 teaspoon vanilla extract
  •  1 Ā½ cups creamy peanut butter

Directions:

Preheat oven to 350 degrees and prepare your donut pan(s).  If you have a pan for donut holes, you can use that as well, just to mix things up a bit.

In a large bowl (I used my KitchenAid mixer bowl), combine the dry ingredients: flour, sugar, cocoa powder, chocolate chips, salt, and baking powder.

In a small to medium-sized bowl combine egg, vanilla, TruMoo Chocolate Milk and butter and whisk together

Pour the wet ingredients into your large bowl with dry ingredients.  If you have a mixer, I will use that on medium for about 1 minute, then turn it down to low until everything is mixed completely.

Using a spoon, or if youā€™re a smart cookie, you can use a baggie and pipe the batter into the donut pan.  Yea, I didnā€™t think of it either; you can thank my youngest daughter, who came to tell me that when I was almost done.  It would have been so much easier and a lot less messy had she been like 5 minutes earlier.  Either way, as long as the batter ends up in your donut pan, you are doing great. Be sure to fill each donut cup about Ā¾ full.  Itā€™s okay if they rise above the pan, just as long as they donā€™t overflow.

Bake for about 12 to 15 minutes or until toothpick ready.  To see if they are toothpick ready, just grab a toothpick and stick in the middle of the donut.  If the toothpick comes out clean, they are prepared.

Remove from oven and allow donuts to cool for a few minutes. Flip the pan over on a wire rack and allow to cool completely so you can add a beautiful peanut butter glaze.

 Peanut Butter Glaze

In a medium-sized bowl, preferably one that youā€™ll be able to dip the donuts into, combine all ingredients but the peanut butter and whisk until mixed completely.  I would start out with 1 Ā½ cups powder sugar, and if needed, you can add more to make it thicker.  If you need to add more powder sugar, only 1/3 cup at a time until you get the desired thickness.

Add peanut butter to the powder sugar mixture and mix completely.

Dip one side of your donut into the glaze; make sure itā€™s covered well.  I normally dip mine about half way, especially with this chocolate and peanut butter combo.  YUMMY!

Place the donut with glaze back on the wire rack with the glazed side up and allow the glaze to harden.

If you like, you can melt the rest of your chocolate chips and pour them into a piping bag so you can pipe on a few chocolate lines.
