Tuna is not only delicious; there are so many health benefits to eating tuna. It is not only a great source of protein and vitamins; it also contains omega-3 fatty acids.

Zucchini Tuna Patties Recipe
Ingredients:
- Olive Oil
- Onion
- Tuna (I used Chicken of the Sea)
- Zucchini
- Lemon
- Eggs
- Breadcrumbs (seasoned)
- Salt and pepper
Directions:
Dice onions, add one table spoon olive oil to frying pan, and sauté onions until they are softened. Set aside.
Combine tuna, breadcrumbs, juice from lemon, eggs, onions, salt, and pepper.
Make the tuna mixture into patties and cover in breadcrumbs.
On medium heat, add another tablespoon of olive oil to the frying pan and cook patties until they are golden brown and warm all the way through.

- 2 cans Chicken of the Sea Tuna
- 1 zucchini grated
- 1 lemon
- 2 large eggs
- 1-2 cups breadcrumbs seasoned
- salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Dice onions, add one table spoon olive oil to frying pan, and sauté onions until they are softened. Set aside.
- Combine tuna, 1/2 cup breadcrumbs (more or less according to your liking) lemon juice, eggs, onions, salt, and pepper.
- Make the tuna mixture into patties and cover in bread crumbs.
- On medium heat, add another tablespoon of olive oil to the frying pan and cook patties until they are golden brown and warm all the way through.
