My mom made these chocolate covered peanut butter Ritz crackers several years ago. She wanted to make something fairly easy that would travel well, and they did not disappoint. However, when she made them, she did place a Hershey Kiss candy on top rather than the zigzag pattern. While the Hershey Kiss is without a doubt an added bonus, they are simply delicious without it as well.
The best part is they are totally customizable. Decorate them up however you like. Make snowman cookies, a Santa belly, or anything else you can cook up.
If you do a lot with candy melts or almond bark I highly suggest grabbing a melting pot if you don’t have one. I purchased a melting pot on Amazon similar to this one and it’s still going strong.

Ingredients:
Peanut Butter
Ritz Crackers
Almond Bark/White Candy Melts
Red Candy Melts
Green Candy Melts
Directions:
Start out by playing about a spoonful of peanut butter on one side of a Ritz cracker and place another Ritz cracker on top.
Repeat until all are complete.
Melt the white almond bark or white candy melts. I use a melting pot to do this; however, you can do so in the microwave or however you prefer.
Dip peanut butter cracker into the bark and cover completely.
Set on a piece of wax paper. Repeat the process until all are covered and allow to dry.
Prepare a piping bag by placing it inside a mason jar or cup and pulling the edges down around the side of the glass. This will make it easier to pour the melted chocolate into the bag.
Melt the red candy melts and pour into your prepared piping bag.
Cut off a small opening at the very tip of the bag. If the whole is too large, it will be difficult to create the zigzag pattern.
Next, zigzag across the top of each cookie.
Repeat with the green candy melts, allow to dry, and enjoy.
