This creamy green chili corn is amazing; it’s been a much-loved side dish at our family gatherings since I was a child.
It’s been several years since I have made this creamy green chili corn. If I am being honest, I was sort of winging it as far as how much of everything to put in, but it turned out great. I do suggest using fresh or frozen green chili. I have never made it using canned green chili, so I’m not too sure how it would turn out.
Also, just a little tip: if you use fresh green chili, you’ll need to add some milk to make it nice and creamy; if you use frozen green chili, you can add some of the juice to give it a little extra flavor. And, you can adjust the heat settings to your taste buds!
Creamy Green Chili Corn
This creamy green chili corn recipe seriously only takes three or four ingredients and about 20 minutes to make. I sure hope you and your family enjoy it.

Ingredients:
- Frozen Corn
- Cream Cheese
- Green Chili
- Green Onion (optional)
Directions:
In a medium sauce pan combine corn, green chili, and cream cheese. If you use frozen green chili, you’ll want to be sure and add the juice as well.
Cook on medium low until creamy. If it’s not creamy enough, you can add a little milk or more juice from the green chili until you get it the consistency you want.
Garnish with green onion, and serve.

- 1 cup hot green chili (adjust the heat settings to your taste buds)
