This green chili relleno casserole is seriously delicious. We eat green chili on everything, ice cream, and pudding even lol. Not really, but green chili adds so much flavor to a wide variety of dishes. And, we are blessed with Hatch green chili in there area, it’s the best if you ask me!
Green Chili Relleno Casserole Recipe
- 1 pound ground beef, turkey, or chicken. It’s all good, lol.
- 1 white onion chopped
- 20 ounces of green chili (I’m lucky enough to live in New Mexico and have Hatch Green Chili if you don’t live where you have access to fresh green chili you can use canned green chilies (whole).
- 1 cups cheddar cheese
- 2 cup Monterey Jack Cheese
- 6 eggs
- 1 3/4 cup DairyPure Milk
- 3 tablespoons flour
- 1/2 teaspoon baking powder
- Salt & pepper to taste

Preheat your oven to 350 degrees and prepare your 9 x 13” pan with cooking spray and set aside for later.
Dice onion and cook it with hamburger meat, salt, and pepper, as well as any other seasonings you’d like to add.
Cover the bottom of the pan with whole green chilies.
Next add meat, cheese, and lay any leftover green chilies on the top of the cheese.
Whisk eggs, milk baking powder, and flour together until mixed completely.
Pour the egg mixture in the pan with green chili, meat and cheese and place in the oven to bake for 30 to 40 minutes.
Remove from the oven, allow to cool a bit and enjoy! It’s yummy warm, with melted cheese!
