It’s almost the 4th of July, so I thought I would share an easy but fun 4th of July recipe with you.  It’s one of my favorites, easy to make, and always a crowd-pleaser.  This Red White & Blue Jello Fruit Salad is one dish our family has not gone without for as long as I can remember.  I like it because it’s a nice low-calorie dessert with plenty of fresh fruit.  You can never go wrong with fresh fruit!

The Red White & Blue Jello Fruit Salad is one of my favorite desserts because it’s so darn tasty and not nearly as bad as eating a slice of chocolate cake!  If you didn’t already know, I’m trying to drop some pounds so it’s a healthier option for myself.

Red White & Blue Jello Fruit Salad

To make your red white and blue Jello fruit salad you’ll need the following ingredients:

  • Fresh blueberries
  • Fresh Cherries
  • Fresh Strawberries
  • 1 package blueberry Jello
  • Water (as directed for preparing Jello)
  • 1 cup fresh blueberries
  • 1 envelope gelatin (unflavored)
  • 1 cup heavy whipping cream
  • 6 tablespoons sugar
  • 2 cups sour cream
  • ½ teaspoon vanilla extract
  • 1 pack cherry Jello
  • Water (as directed for preparing Jello)
  • 1 cup fresh cherries (pitted and sliced in half)
  • Whipped topping
  • Additional berries for topping

Directions:

First, prepare blue Jello as directed on packaging.

Pour into a serving bowl and pour in blueberries.  Refrigerate until Jello is first (about 2 hours).

In a small saucepan, sprinkle unflavored gelatin on top of ½ cups of cold water.  Allow to stand for about 1-2 minutes.  Pour in the cream, sugar and cook over low heat until gelatin is dissolved (stir frequently). Allow to cool to room temperature, whisk in vanilla and sour cream and place in refrigerator until the first (about 2 hours).

Prepare cherry Jello as directed on the package.  Slowly spoon over white layer, add cherries and place in refrigerator until firm (about 2 hours).

Top with whipped topping and any berries desired.
