So what do you say we celebrate with this fun twist on old-fashioned potato salad! That’s right; we are excited to share this Twice Baked Potato Salad recipe with plenty of cheese, crisp green onions, and yummy black olives. Oh, don’t forget about the sour cream.

Twice Baked Potato Salad Recipe
Ingredients:
- Potatoes
- Butter
- Sour cream
- Black Olives
- Green Onions
- Bacon
- Cheddar cheese
- Parsley Leaves
- Green onions
Directions:
Preheat oven to 400 degrees
Rinse potatoes, under cold water.
Rub potatoes down with butter.
Wrap in aluminum foil and poke several holes in the potatoes using a fork. Bake for 45 minutes or until done. Remember, time may vary depending on the size of the potatoes.
Remove from oven and allow to cool.
Remove skin from potatoes if you like. Cut potatoes into squares and mash. You can use your electric mixer to save time and be sure they are nice and mashed.
Chop fresh parsley leaves and mix into the potatoes.
Combine sour cream 1 cup cheddar cheese and potatoes until creamy and smooth.
Place potatoes in a baking dish.
Chop cooked bacon and place on top of potatoes; top with remaining cheddar cheese.
Bake for 10 minutes or until cheese is melted.
Remove from oven and top with sliced olives and chopped green onion, and enjoy!
BAM, you are all finished.
