Homemade Soft Pretzels Stuffed with Brie Cheese

  • 4 ½ cups flour
  • 1 packet instant dry yeast
  • 1 ½ tablespoons sugar
  • 2 teaspoons salt
  • 1 ½ cups warm water
  • 6 tablespoons butter, melted (cooled)
  • Joan of Arc Double Cream Brie Cheese
  • Sea salt
  • Rosemary (optional)

Directions

Start out by grabbing a medium sized bowl. I used my stand mixer bowl. Now, combine the flour, sugar, yeast, and salt.

Place the paddle attachment on your stand mixer.

Add the water and butter and mix on the low setting until mixture begins to turn into dough.

Change to the dough hook and allow the mixer to knead dough on low for about 5 minutes or until it begins to pull away from the sides of the bowl.

Roll the dough into one large ball.

Coat a bowl with oil and place the dough in the bowl. Cover the bowl with a kitchen towel and place in a warm place for one hour. The dough should rise and double in size.

Preheat the oven to 425 degrees and prepare two baking sheets. You can do this with non-stick spary or parchment paper. I used parchment paper.

On a lightly floured surface, roll the dough out and cut into stripes or divide. You can divide the dough into 13 equal pieces and roll the dough out individually.

Roll out each strip and place brie cheese in the center, and pinch the dough closed, leaving no openings.

Using your hands, roll the dough into a rope and twist the pretzel into shape. This can be a bit confusing; therefore, I have provided the above images for your reference.

Repeat until finished.

In a medium-sized bowl, combine baking soda and hot water. Dip each pretzel into the water for about 20 seconds, remove from the water, and place on a piece of parchment paper.

Sprinkle with sea salt and rosemary (optional)

Place them on the baking sheet and bake for 10 minutes or until golden brown.
