If you are looking for a great grab-and-go breakfast or snack, these peanut butter and jelly protein balls are for you. They are seriously delicious and loaded with so many healthy ingredients.
Peanut Butter and Jelly Protein Balls
To make these protein balls, you’ll need creamy peanut butter, oats, honey, vanilla extract, protein powder (optional), almonds, chia seed, strawberry, and strawberry crisps, but you could really go any direction with them too. Maybe blueberry, cherry, or even use other mixed berries or fruits you enjoy.
For the peanut butter layer of the protein balls, you’ll combine peanut butter, honey, almonds, protein powder, and chia seed in your mixer and mix until everything is totally combined. Now, set it aside for later.
Next, you’ll combine the strawberry crisps, peanut butter, protein powder, and honey in the mixer and mix until everything is combined.
The mixture should be sticky enough to form into balls; if you find it’s falling apart, try adding more peanut butter and/or honey to get the desired consistency. Next, you will form the mixture into balls using 1/2 of the peanut butter mixture and 1/2 of the strawberry mixture.
That’s it, not a whole lot to it. Store the peanut butter and jelly protein balls in the fridge for a quick grab-and-go breakfast or snack the whole family is sure to love.
