I’m a sucker for anything with caramel, so this Rolo Cake recipe is screaming my name. Seriously, I don’t eat too many sweets, but I am a firm believer in rewarding myself from time to time. And, boy, what a reward a slice of this oh so yummy Rolo cake would be. Am I right?

Rolo Cake Recipe

To make this rolo cake recipe, you’ll need the following ingredients:

  • 1 cups white sugar
  • 1 3/4 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoons baking powder
  • 1 teaspoons baking soda
  • 1 teaspoon salt
  • 1 eggs
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoons vanilla extract
  • 1/2 cup boiling water
  • 1 package Rolo candy

Directions:

  • Preheat oven to 350. Grease one nine inch round pans.
  • In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil, and vanilla, mix for 2 minutes. Stir in the boiling water last.
  • Bake 30 to 35 minutes. Cool on a wire rack.
  • Spread caramel buttercream on the cake and top with a Rolo or five. It’s all up to you how many Rolo’s you place on your cake.

Caramel Butter Cream Frosting

  • Cream shortening and butter with mixer. Add caramel and vanilla.
  • Stir in sugar, one cup at a time. Add milk and beat at medium speed until light and fluffy.
